No, I don’t mean the Bills (although 5-2 ain’t bad!).
Buffalo meat (also known as bison) has been steadily gaining popularity – but if you haven’t tried it, or aren’t too adventurous with your palate, it can be intimidating.
Buffalo is great if you want to try something new in the world of red meat. Beef is never going out of style – but it’s always fun to keep it interesting in the kitchen. While buffalo really is the OG red meat, for some time it’s been considered an exotic choice.
Buffalo is often grass-fed and grass-finished – meaning it’s never confined to a feedlot prior to processing. It’s got a mild game-like flavour to it – so while it’s not as exotic as elk or venison, it does have a distinct flavour from beef. It’s high in protein, and lower in cholesterol and calories than other red meat.
Buffalo is incredibly versatile, and can be used in lots of recipes. Buffalo burgers or honey garlic buffalo sausages are great options if you’re wanting to test the waters – they can be dressed the same as your other favourite burgers and sausages.
If you’re a buffalo-eating veteran, try a buffalo ribeye. Because buffalo meat is so lean, it’s often best to cook to no more than a medium temperature – sear on both sides until lightly pink in the middle. You can have it on its own, with a side, or cut up and used in fajitas – yum! Prefer tacos? Ground buffalo is a great choice for those – Taco Tuesday will never be the same again.
If you prefer something hearty in the colder weather, you could make up a stew with stewing buffalo. Just cook it up and toss it in the slow cooker with some veggies and broth. What’s more satisfying than a dinner that cooks itself?! If you want to take it to the next level, you could even make your own broth by simmering buffalo bones in a stock pot with your choice of veggies.
The bottom line? Buffalo is pretty dope. It’s delicious, it’s versatile, and it’s good for you.
