truLOCAL Trish: How to Cook Steak

Can we just go ahead and say that steak is the king of all meats?

There. It’s out there in the world.

Steak is great. It’s juicy, it’s flavourful, it’s versatile…and it can intimidate the hell out of people.

Cooking a perfect steak isn’t as difficult as it may seem. There are only four basic steps – season, cook, rest, and serve.

The first step is seasoning. Steak is great with just salt and pepper on both sides – the flavour of the beef can really shine through. If you want something a bit more robust, you can’t go wrong with steak spice.

Next, you cook. Preparing steak on high heat will give you a nice sear on the outside while keeping the inside nice and tender. You don’t need to cook steak for long – for a rare steak, you only need about 8 minutes total. Medium rare will be ready in roughly 9 minutes. Unlike their less done counterparts, well-done steak should be cooked on a lower heat for approximately 20 minutes total – the lower heat will prevent the steak from burning while the inside comes up to temperature.

If you want to test that your steak is done to your tastes, grab a meat thermometer. A rare steak will be about 125ºF, medium rare is roughly 135ºF, and well done is around 170ºF.

Once you’ve prepared your steak to the appropriate doneness. remove it from heat and allow it to rest for 3-5 minutes. If you cut into your steak too soon, all the delicious juices will escape.

Allowing the steak to rest will let those juices settle, so you’ll have a beautiful, tender cut.

The final step is to serve – slap that bad boy on a plate, and get to feasting. Add some potatoes or greens if you’re really feeling a whole meal.
